What length and gauge of rope do you use for ties like this? I'm just starting into rope bondage and I find myself completely out of my depth in terms of what to buy and prepare for.

A lot of people use 8m lengths because that's what they do in Japan, but in my experience caucasians tend to be larger, so I use 10m and 5m lengths. It's 6mm jute.
