when I've tried to use sand or water photos as reference and colour source to colour with in the same way as the faces, it doesn't usually work as well

Use "Soft light" mode

Just one soft light layer or do I make duplicate layers and different blend modes?

I use 2 layers:
1) Color AND the same as
2) Soft Light.
And then adjust the Color layer - usually make it more transparent.
