....Why are bunnies symbol of Easter anyway? I know Easter's symbolic to starting spring and new life (that's why eggs 'n chicks) but why bunnies?
It also reminds me of a rather awful child hood memory

ah, it's quite simple. Easter was originally a pagan festivity celebrating the renewal of nature, AKA everything has sex with everybody, most representated by bunnies.
It's also around that time that chicken lay eggs again, as over winter they don't really do (unless you keep them warm with lots of light).

The word "Easter" comes from the Germanic fertility goddess Δostre - the word "Easter" does not appear in the Bible.
Δostre's festivals took place at the same time as the festivities surrounding Christ's resurrection; as Christianity spread it adopted those customs.
Her symbols included the hare, and eggs - hence we have bunnies and eggs today.
It is worth noting that parts of Christ's own Resurrection story shares some key points with European pagan gods stories of death and rebirth, which in turn led to wider acceptance of Christianity in those areas.
